56 2021 • 06 ecipe Recipe by Lim Lea Kuai Photo by Chan Yunn Horng Ingredients: Monkey head mushrooms ............ 300 g Lettuce ................................ a few leaves Flour .............................................. 3 tbsp Cooking oil (for frying) Seasonings: Ginger juice .................................. 1 tbsp Brown sugar .................................... 1 tsp Ground pepper ................................ 1 tsp Five-spice powder ........................ ½ tsp Fermented red bean curd ................. 1 pc Preparation: 1. Cut the monkey head mushrooms into bite-sizes and marinate with the combined seasonings for an hour. 2. Lightly coat the marinated mushrooms in flour. 3. Heat oil and deep fry the mushrooms to golden brown. 4. Remove from heat and serve onto a plate lined with lettuce leaves. Monkey Head Mushrooms with Fermented Bean Curd (serves 5-6)
