If I was not around, I would request our children to help her.” Volunteer Yap Son Moy was Geok Kim’s partner in charge of protein foods. She explained, “Prior to this, I had participated in four batches of ‘Healthier Me’* 21-day challenge, so I have some knowledge about protein intake for vegetarians. That is why I took up the task of preparing a few dishes.” Although Son Moy had to rise early to cook before work, she enjoyed the task. She said, “It is a little tiring, but I am willing and happy to do it. Our mindset matters. It is pure joy to see others enjoying our bento. Moreover, with proper planning and time management, things are organized when I cook.” Hidden behind what seemed to be a simple bento were the collective efforts and contributions of many. Thankfully, the hard work had paid off with more and more people coming on-board and adopting vegetarianism. Hopefully, in the near future, it will be the power that helps mitigate climate change and natural disasters the world is currently facing. * Participants of the programme are encouraged to maintain a healthy whole-food plant-based diet, which is prepared with less oil, less sugar, an adequate amount of salt; neither with eggs, dairy products nor processed foods; yet still tastes good.
