TZU CHI 136 13 Recipe by Chin Yen It’s time to whip up your own meals. Here is a simple yet delicious recipe that works, especially for beginners. Everyone can cook Ingredients: Pumpkin ................. ½ cup (skinned and cubed) Brown shimeji mushrooms ................................. ½ pack (broken into 8 portions) Snow peas ............... 1 pack (blanched) Firm tofu ................. 150 g block (cut into slices) Goji berries ............. 1 tsp (rehydrate in hot water) Ginger ..................... 1 thumb size Vegetable stock or water ................................. ½ cup Preparation: 1.Roast pumpkin cubes and ginger in a toaster or oven for 20 minutes. 2.Combine vegetable stock (or water) with the roasted ingredients and blend until smooth. 3. Pour blended mixture into a pot and simmer till it bubbles. Salt to taste. 4.On a medium heat non-stick pan, sear the tofu slices until lightly golden brown. 5. Sear the portions of mushrooms until soft. Set aside. 6.On a plate, place tofu in centre. Surround the tofu with blanched snow peas and seared mushrooms.
