55 TZU CHI 131 Blissful Bites Ingredients A: Castor sugar ................................... 140 g Soy milk ........................................ 50 ml Water ............................................. 50 ml Cooking oil ................................... 2 tbsp White sesame .............................. 1 bowl Ingredients B: All-purpose flour ........................... 280 g Baking powder ................................ 1 tsp Baking soda ................................... ½ tsp Fine salt ......................................... ¼ tsp (serves 8 – 10) ecipe Chief cook: Chang Sew Loon Photograph by Sam Pin Fook Preparation: 1. Bring water and castor sugar to a boil. Turn off heat when sugar has dissolved. Set aside to cool. 2. Combine soy milk and cooking oil. 3. Mix Ingredients B together. Sieve and transfer to a larger deep plate. 4. Pour (1) and (2) into (3). Knead until the dough is smooth, then roll into a long roll and cut into small equal portions. 5. Roll each into a 15 g ball. Dip in water and coat with sesame seeds. Deep fry over medium heat until the balls are golden brown, float to the surface and crack. Remove and drain the excess oil.
