Happy Reunion Preparation: 1. Heat oil in a wok. Stir-fry shiitake and lion’s mane mushrooms until fragrant. Add the remaining ingredients (except beancurd sheet) and continue to stir- fry. Add seasonings and mix well. 2. Grease a large bowl with a little cooking oil. Spread the beancurd sheet in the bowl, transfer the cooked ingredients into the sheet and wrap it up. Steam for 25 minutes. 3. Place the serving plate over the bowl and turn the bowl upside down. Slightly cut open the beancurd sheet to reveal the ingredients. Garnish the side with green pepper before serving. Ingredients: Pumpkin ........ 200 g (skinned, cut into chunks) Lion’s mane mushrooms .................100 g Beancurd pouches ............................ 5 pcs (lightly fried, cut in half) Dried shiitake mushrooms .............. 5 pcs (soaked, cut in half) Red dates ............... 5 pcs (cut in half, seeded) Button mushrooms .......... 5 pcs (cut in half) Chinese cabbage .... 3 leaves (cut into pieces) Beancurd sheets ................................. 1 pc Carrot ..................................... ½ pc (cubed) Green pepper ..................... in moderation (sliced, for garnishing) Seasonings: Soy sauce .........................................1 tbsp Salt ..................................................... 1 tsp Mushroom powder ........................... 1 tsp Pepper ................................ in moderation Sesame oil ......................... in moderation (serves 8 – 10) ecipe 2021 • 01 52
